Sushi - the Japanese answer to praline

Nowadays there is hardly anyone in the whole of Europe who has no concept of sushi as a Japanese dish. Depending on the recipe the dishes consist of savoury, vinegary rice and various side trimmings, mainly fish and other seafood which now and then are eaten raw. Sushi is particularly healthy and easily digestible because it contains nearly the same nutritional value as other foods but significantly less fat. The high content of unsaturated fat and the amino acid taurine in fish help to protect against strokes, heart attacks and hardening of the arteries while also reduceing cholesterol levels. And as a calorie controlled meal, sushi is tastier than any other diet!

The most famous and most popular "fish-pralines" are "Nigiri-zushi" and "Maki-zushi". Nigiri-zushi is hand moulded rice topped with fish. In the case of Maki-zushi, the rice is spread over a bamboo mat then overlayed with fish and rolled up.

Sushi is usually eaten as a complete meal. One can eat sushi with fingers or chopsticks. No matter which way, in both cases a bite sized bit of sushi is taken and dipped in the accompanying soya sauce. It should be noted that only the fish side is dipped and never the rice as otherwise it can fall apart which is considered very bad manners. Incidentally, it is just as unstylish to point at people or things with chopsticks.

Classically, one drinks green tea or Japanese rice wine with sushi. But beer or a glass of wine also go very well with it.

There are only a few who - having tasted sushi once - can keep their hands off it. And rightly so as there is hardly a healthier and tastier praline in existence.
